Abstract
Aseptic manufacturing of low-acid, single-phase foods such as milk and milk-based products, cheese sauces, and puddings is well established as a reliable and effective means of heat preservation, However, estab lishing a scheduled process to ensure commercial sterility of an asept ically manufactured food containing particulates is more complex.
