The fatty acid group in Acinetobacter calcoaceticus emulsan was modifi
ed by using different carbon sources. The major components of the fatt
y acid group were 3-hydroxydodecanoic acid (3-HDDA), hexadecanoic acid
, and octadecenoic acid. Among these, 3-HDDA was found to have the mos
t important influence on the emulsifying activity of the emulsan.
