Supercritical fluid extraction was employed to remove lipids from sard
ine (Sardina pilchardus) muscle. Extraction experiments using carbon d
ioxide under pressures of 12.6 and 18.0 MPa and temperatures of 313 an
d 321 K were conducted. Lending of sardine oil in CO2 was found to inc
rease with increasing pressure, to diminish with increasing temperatur
e and was independent of residence rime. A slight increase in polyunsa
turated fatty acid content in the oil extracted by supercritical CO2 w
as observed throughout the extraction. Supercritically-extracted sardi
ne oil was found to be unstable. Results were compared with those obta
