Abstract
This paper tries to study two types of papaya fruit (Carica papaya gro up Solo, var. Sunrise): fruits coming from female flowres and fruits c oming from hermaphrodite flowers, in order to determine which one has greater content in ashes and the variations due to the freezing proces s and a long storage (one year). Analysis carried out include moisture , ashes and mineral elements by using flame AAS. Results show potassiu m as the main mineral element. There is also a relevant sodium content , quite different to the values reported by other authors. Both types of fruits have different behaviour after the whole process.
