Abstract
This research focuses on determining the concentration and antioxidant activity of flavonoids in apples and apple products as a function of storage and processing. The results will be used to optimise apple pro ducts with respect to both flavonoid content and antioxidant activity. (C) 1997 Elsevier Science Ireland Ltd.
