Abstract
All food producers have a direct responsibility to ensure the safety a nd quality of their products. In order to evaluate a sanitation progra mme effectively, it is important to obtain results rapidly. ATP (adeno sine triphosphate) bioluminescence provides a reliable and rapid alter native to traditional microbiological techniques. The use of this tech nique for monitoring allows information to be provided in time for cor rective action to be taken. This maintains control of the process, thu s avoiding recall campaigns, adverse publicity or even food scares, al l of which would ultimately end in reduced sales and/or profits.
