Sucrose phosphorylase from Leuconostoc mesenteroides catalyzed transgl
ucosylation from sucrose to (-)-epigallocatechin gallate. Two main tra
nsfer products were obtained, and their structures were identified as(
-)-epigallocatechin gallate 4'-O-alpha-D-glucopyranoside and (-)-epiga
llocatechin gallate 4',4''-O-alpha-D-diglucopyranoside on the basis of
secondary ion mass spectrometry analysis, component analyses of their
enzymatic hydrolyzates, and nuclear magnetic resonance analysis, The
stability of (-)-epigallocatechin gallate was greatly increased by the
glucosylation.
