Abstract
Our data come From a microbiological survey on surface and room atmosp here of the pantry of a public Food service. Twenty-four checks have b een done; 35 environmental samples have been collected (840 total samp les), 5880 assay (7 parameters each sample) have been performed. Such microbiological determinations have allowed to identify specific place s in the pantry with high bacterial amounts and a constant presence of Staphylococcus aureus. These findings and related public heart action s have allowed to solve problems with a remarkable improvement of the environmental microbiological state.
