Growth and acid formation of lactic acid bacteria were examined under
batch operating conditions for various micro-organism strains in order
to find the most efficient strain for lactic acid production. In addi
tion, production of lactic acid from deproteinized whey using the effi
cient strain immobilized in an agar gel and fermented in a continuous
fixed bed reactor was investigated. The optimal processing temperature
and dilution rate were found to be 40 degrees C and 0.33 h(-1), Maxim
um volumetric productivities of lactic acid from whey were 7.28 and 9.
