The changes of concentration of all sulphur compounds as S-VI+, reduci
ble sulphur and concentration of phospholipids during the processing o
f rape seeds and rape-seed oil in technological order - seed treatment
, pressing, extraction, refining were studied. With the exception of b
leaching the content of all sulphur compounds did not change at refini
ng in contrast to compounds containing S-II-. It was found that especi
ally sulphur compounds containing S-VI+ mainly participated in the cat
alyst poisoning at hydrogenation. The concentration of these compounds
during hydrogenation decreased on 7 - 80% of their initial amount, li
ke that concentration of phospholipds.
