Abstract
Double-low rapeseed produced in the Czech Republic was processed by ex peller pressing and solvent extraction, both crude oils were mixed, su perdegummed, alkali refined, bleached with acid-activated earth, and d eodorized. Tocopherols (gamma-tofopherol moderately prevailing over a- tocopherol, delta-tocopherol being present only in traces) were partia lly removed during the refining, particularly in the deodorization ste p. Pheophytins were removed more completely than chlorophylls. The con tent of polar compounds, produced by enzymic oxidative and hydrolytic processes in stored seeds, moderately decreased during the refining, b ut remained rather high (1 - 3%) even in refined oils, The oxidative s tability decreased during the refining. Changes in the sensory quality on storage for 6 months showed weak but perceptible deterioration. Bo th the quality of crude oil and proper processing conditions are impor tant to obtain high quality refined oils.
