The simulation program of fermenter sterilisation encourages students
to make decisions on the heating and cooling of fermenters to achieve
a required degree of sterilisation and conserve the maximum amount of
a thermolabile ingredient (e.g. a vitamin). This is achieved by simult
aneously calculating the Del factors for spore and vitamin destruction
during the heating and cooling stage of the fermenter. The program di
splays the complete temperature time profile for the sterilisation cyc
le and summarises the relevant data in a table.
