H. Alexandre et C. Charpentier, INFLUENCE OF FERMENTATION MEDIUM AERATION ON CELL LIPID-COMPOSITION AND FATTY-ACIDS AND ACETIC-ACID PRODUCTION BY SACCHAROMYCES-CEREVISIAE, Sciences des aliments, 15(6), 1995, pp. 579-592
Aeration of the fermentation medium results in a larger biomass produc
tion. From the results of lipid analysis in Saccharomyces cerevisiae c
ell it can be infered that aeration does not modify unsaturated fatty
acids content in cells and limits the inhibition of sterol synthesis.
Moreover aeration has no effect on acetic acid production but reduces
that of medium chain fatty acids. The relationship between lipid metab
olism and the production of those two metabolites is discussed.
