Abstract
Aeration of the fermentation medium results in a larger biomass produc tion. From the results of lipid analysis in Saccharomyces cerevisiae c ell it can be infered that aeration does not modify unsaturated fatty acids content in cells and limits the inhibition of sterol synthesis. Moreover aeration has no effect on acetic acid production but reduces that of medium chain fatty acids. The relationship between lipid metab olism and the production of those two metabolites is discussed.
