The economical crystallization of vitamin C (L-ascorbic acid) has grea
t importance in the pharmaceutical industry. The properties of vitamin
C make it difficult to produce this material with the required qualit
y. Light sensitivity, rate of decay under the influence of both oxygen
and excessive humidity and inclusion content are all functions of cry
stal size and habit.
