30 patients with multiple sclerosis (age: 23-54 years) were checked fo
r balanced nutrition according to requirements. Kind and quantity of f
ood consumed were recorded over 7 days. Consumption profiles show litt
le consumption of whole-meal products, potatoes, vegetables, milk and
dairy products, and saltwater fish. Nutrition of the patients was eval
uated on the basis of the nutrient recommendations of the German Socie
ty for Nutrition. Results show low energy supply and a body mass index
in the normal range. Carbohydrates supplied 49% and fat 37% of the da
ily energy. Low nutrient densities have been found for vitamines D, E
and folic acid and for the trace elements zinc and iodine. The median
supply of carbohydrates, essential fatty acids, dietary fibre, vitamin
s D, E and folic acid, of calcium, iron and iodine failed to reach the
recommended values by more than 10%, while fat supply exceeded the re
commended values by 25%. The deficits in nutrient supply can be avoide
d by specific selection of foods.
