Abstract
Following a general review of researches relative to identification of irradiated foodstuffs, the European quite official protocols are brie fly described: Electron Spin Resonance, Thermoluminescence and Gas Chr omatography; this last technique is particularly described for food co ntaining lipids. we point out the problems of available time, sensibil ity and more fundamental ones involved in this last protocol.
