A system capable of analyzing both beet brei and the hot extraction ju
ice obtained from brei is described, The system operates by reproducin
g conditions which are comparable with those in industrial diffusion p
lants, Both the brei and the extraction juice are then analyzed using
the NIR technique. The prototype, which is set up at this time, is cap
able of analyzing up to twenty samples per hour. The results obtained
are discussed as the basis of a new principle for evaluation of the in
dustrial quality of beet.
