Abstract
An attempt has been made to optimize the production of enzyme tannase by solid state fermentation (SSF) using the organism Rhizopus oryzae. The best favourable conditions for enzyme production include initial p H 5 with 4 days of incubation period at 40 degrees C and 72% humidity, and 10 g wheat bran soaked in 2.5% tannic acid.
