H. Dornenburg et D. Knorr, GENERATION OF COLORS AND FLAVORS IN PLANT-CELL AND TISSUE-CULTURES, Critical reviews in plant sciences, 15(2), 1996, pp. 141-168
Plant cell and tissue cultures can be used for the synthesis and produ
ction of secondary metabolites like colors, flavors, and sweeteners. M
ost often, plant cell cultures fail to produce the desired products. I
n such cases strategies to improve the production of secondary metabol
ites must be considered. Plant cell culture technology has now reached
the point where a variety of culture types can be critically assessed
as potential sources of existing and novel flavors and pigments. This
brief review gives examples where progress has been made in the devel
opment of plant tissue culture systems.
