Sterilized whole milk was inoculated to contain an initial population
of ca. 10(6)-10(7) cells of Yersinia enterocolitica or Campylobacter j
ejuni/ml. Inoculated milk samples (20 ml) in vials were immersed in wa
ter and heated for 1-20 min with a microwave oven (2450 MHz) set at 71
.1-degrees-C. Heating for 8 min completely inactivated Y. enterocoliti
ca so negative results were obtained by cold enrichment. Heating for 3
min inactivated all cells of C. jejuni.
