Abstract
The development, verification and finally the practical application of a mathematical model are presented which enables the determination of process parameters for the fractionation of milk fat with super-criti cal carbon dioxide. Using the model mentioned above it is possible to produce new milk fats of defined qualities whose possible overall prod uction costs could be calculated even in advance.
