Abstract
Seeds oil of sisymbre (Sisymbrium sp, Brassicaceae) is constituted of 19 fatty acids of which two are long chain type: gondoic (9,2 %) and e rucic (9,7 %) acids. The nature of fatty acids in 2 position of glycer ol is determined by two methods : enzymatic hydrolysis by pancreatic p ig lipase and chemical reaction with ethylmagnesium bromide; these two techniques give the some results. The two positions are mainly esteri fied by linoleic and linolenic acids. RP18-HPLC analysis of triacylgly cerols and quantification of positional isomers of type 2(1,3) confirm that this seed oil is principally constituted of Ln(LnE), Ln(LG), L(O G), O(OP) and L(PE).
