Abstract
Impact of cholesterol information and demographic variables on egg con sumption is examined using data from a consumer survey conducted by th e United States Department of Agriculture (USDA). Estimation results o f a double-hurdle model suggest that information and health concerns a bout cholesterol represented by three variables are significant factor s affecting consumer decisions about whether to consume eggs and how m uch to consume. Demographic variables with significant effect on the p articipation and/or consumption decisions include region, employment s tatus, age, body mass index, sex, race and education.
