Densities of sucrose+beta-cyclodextrin+water (SUC+CYC+W) ternary syste
ms were measured at 25 degrees C and mean apparent molar volumes of SU
C+CYC (V-phi,V-m) in water in each composite mixture have been evaluat
ed. Apparent molar volumes of SUC (V-phi,V-suc) have also been compute
d from the volume data of each ternary composite mixture. Variation of
V-phi,V-m and V-phi,V-suc with respect to the total molality m(t) of
SUC+CYC and to that of SUC m(suc) show the formation of inclusion comp
lexes between SUC and CYC molecules with 1:2 and 1:1 stochiometries in
composite mixtures of mole ratios 0.588 and 1.12 respectively.
