Our objective was to produce reliable data on the contents of folate v
itamers in pig, beef and chicken liver, beef kidney and some liver pro
ducts. Folate contents were determined in monoglutamate form, using re
versed-phase HPLC, Pig and beef livers contained 730-1470 mu g folates
in 100g, tetrahydrofolate being the most abundant form detected. Froz
en chicken liver also contained about 1000 mu g folates in 100g. Proce
ssed foods containing liver, except canned baby foods, were also good
folate sources. In processed foods, 5-methyltetrahydrofolate was the p
redominant folate form. The detected folate contents were high, compar
ed with published data.
