Despite significant research on the packing and nucleation characteris
tics of amphiphiles at the air/aqueous solution interface, surprisingl
y little is known about the selection or design of emulsifiers for con
trolling crystallisation at the industrially more relevant oil/water i
nterface, as found in emulsions. In this contribution, a combination o
f nucleation studies, interfacial tension measurements and X-ray powde
r diffractometry have been used to probe the relationship between nucl
eation temperature, physical form of crystals, emulsifier molecular st
ructure and the extent of ordering and molecular recognition at the in
terface between m-chloronitrobenzene and water.
