Abstract
Oil seeds, essential in human diet thanks to their wealth of proteins (which can be compared to those of animal origin foods), have always b een used to produce oils and Flours. Nevertheless soy is more and more utilized as raw material in order to obtain new products (soymilk or tofu) having high nutritional value and offering an alternative to the traditional marker foods (milk or cheese).
