Abstract
The food industry is facing tremendous challenges as it strives to mee t consumer demands and continues to produce the most affordable, highe st quality and safest food possible. The Hazard Analysis Critical Cont rol Point system, HACCP is recognized internationally as the best syst em of controlling food production available today. The adoption of HAC CP throughout the meat and poultry industry should bring the greatest control and prevention to food production thereby offering greater ass urances of food safety to consumers.
