Foodborne disease is increasing in industrialised countries for comple
x reasons, including changes in the aetiological agents, the populatio
n at risk and food production and processing. It is unlikely ever to b
e eliminated, but the risk can be minimised. A preventive, rather than
reactive, approach to ensuring food safety from ''paddock to plate''
is proposed for Australia, bringing it in line with many of its tradin
g partners.
