Abstract
The mechanism of ethanol toxicity in yeast cells is elucidated. A numb er of factors, such as plasma membrane composition, medium composition , osmotic pressure, accumulation of intracellular ethanol, temperature etc., influence the tolerance of yeast to ethanol. The possibilities of improved ethanol tolerance by changing fermentation conditions and supplementation with additives are summarized.
