High erucic acid rapeseed (HEAR) oil from the Peoples Republic of Chin
a was hydrogenated selectively and non-selectively. Samples of the hyd
rogenated oils were analysed for fatty acid and total trans content. T
he formation of solid fat was determined by p-NMR and visualized by DS
C-melting curves. Crystallization temperatures were approximately 14-1
5 degrees C lower than dropping points. DSC crystallization curves sho
wed two distinct peaks. High melting glycerides (HMG) contained higher
levels of triglycerides of carbon 56 and higher than the original oil
. The oil contained 30 ppm of sulfur as determined by the combustion m
ethod. Estimation of sulfur content by analyses of the spent catalyst
was 35 ppm. Appropriate mixtures of the hydrogenated HEAR and liquid s
unflower oil for margarine formulation were in the beta' form.
