The effect of vacuum and modified atmosphere packaging on the growth/s
urvival of Salmonella enteritidis on fresh poultry and fish (Boops boo
ps) is described. Salmonella enteritidis survived but did not grow sig
nificantly in all samples (poultry or fish) at 3 degrees C. At 10 degr
ees C the numbers of Salm. enteritidis increased rapidly in vacuum-pac
ked samples and in samples flushed with 100% N-2, 20% CO2/80% O-2 of b
oth types of proteinaceous food. Growth was also evident in fish and p
oultry flushed with 100% CO2; however the rate of growth was greater i
n fish samples rather than in poultry.
