Capillary electrophoresis performed on uncoated capillaries is used to
quantitate major whey proteins in samples of raw bovine milk from the
Fleckvieh, Holstein and Menorquina breeds. The influence of capillary
conditioning between runs and of sample preparation steps on reproduc
ibility and resolution are discussed. No interferences from immunoglob
ulin G and lactoferrin in the determination of beta-lactoglobulin and
alpha-lactalbumin are demonstrated. Study of the dependence of beta-la
ctoglobulin and alpha-lactalbumin concentrations on beta-lactoglobulin
genotype shows no direct influence of this genotype on alpha-lactalbu
min content, while the highest rate of biosynthesis of beta-lactoglobu
lin is associated with allele A of this protein.
