Long-chain fatty acids from red and albino mutants of the filamentous
fungus, Monascus purpureus, were investigated. Fatty acids from C-14 t
o C-24 were identified and quantified by means of gas chromatography-m
ass spectrometry. Thirty-nine fatty acids were identified, 22 saturate
d (including iso and anteiso), 14 monoenoic, two dienoic and alpha-lin
olenic acid (up to ca 8%). The difference in fatty acid composition be
