Abstract
Nowadays the head of adult sheep can regularly be found on the market and it is eaten by immigrants of the islamic religion. The survey was carried out in two sheep slaughterhouses in Piedmont. In order to eval uate the microflora, bacteriological examination were carried out on s heep brains regularly slaughtered. The main microbic-groups were count ed and the potentially pathogenic microbic-species (Salmonella spp., L isteria monocytogenes) were examined more carefully. We consider this Food with some suspicion, because the culinary preparation is made Fol lowing traditional recipes that exclude any intervention of health edu cation.
