Composition in fatty acids of the covering oil of Italian canned macke
rels and tunas on sale has been analysed by gas liquid chromatography.
The experimental method provided also the analysis of the trans isome
rs of the unsaturated fatty acids: the level of the trans isomers has
been low. In total 13 samples of mackerels in olive oil, 2 in soya oil
and 1 in sunflower oil plus 10 samples of tuna in olive oil have been
analysed.
