Abstract
The mechanism of ethanol toxicity in yeast cells is elucidated. A numb er of factors, such as plasma membrane composition, medium composition , osmotic pressure, accumulation of intracelullar ethanol, temperature , etc., influence the tolerance of yeast to ethanol. The possibilities of improved ethanol tolerance by changing fermentation conditions and supplementation with additives are summarized.
