A new fluorometric method has been developed to determine indole in sh
rimps. The method is based on the reaction of indole with hydrogen per
oxide in acid medium to give a highly fluorescent product. In order to
investigate the nature of the reaction, the product of the reaction h
as been isolated and identified as indigo. A linear relationship is ob
tained between the fluorescence intensity of the reaction product and
indole concentration in the range of 2.0 x 10(-7)-2.0 x 10(-6) M. The
sensitivity of the method allows the determination of indole in other
types of sea food.
