This monograph surveys the development of solid sweetener products der
ived from the hydrolysis of starch. The products range from maltodextr
ins with a dextrose equivalent (DE) under 20 to highly converted total
sugars containing over 95% dextrose (dry basis). As with liquid starc
h sweeteners, methods have been developed to enhance sweetening power
in order to capture markets from sucrose.
