Abstract
The effects of ascorbic acid on the deodorizing activity of polyphenol s against methanethiol (CH3SH) was investigated, The addition of ascor bic acid caused loss of the deodorizing activity of polyphenols agains t CH3SH. It was assumed that ascorbic acid prevented the oxidation of polyphenols, which is the essential step for the deodorizing action ag ainst CH3SH and so suppressed the deodorizing activity.
