Abstract
Phenolic antioxidants such as butylated hydroxytoluene, alpha-tocopher ol, eugenol, isoeugenol, sesamol and quercetin effectively prevented t hermal decomposition of methyl 13-hydroperoxyoctadecadienoate in metha nolic solutions. Ascorbic acid, however, was found to promote the deco mposition and the acidic nature of the vitamin was suggested to be inv olved in the mechanism.
