Abstract
Storage stability of 5 brands of refined sunflower oil was evaluated b y storing at 37 degrees C. Rates of increases in peroxide and thiobarb ituric and values as well as changes in sensory scores and linoleic ac id content varied considerably among different brands. Sunflower oil s amples, which autoxidised fastest, had lower concentration of tocopher ol, but highest concentration of iron.
