Three multiple forms (F-I, F-II and F-III) of xylanase produced from A
spergillus oryzae were established in the commercial preparation Luizy
m(R). Two methods were used (ion-exchange chromatography and polyacryl
amide gel electrophoresis). The active xylanase fraction (F-III-II-I)
was purified and characterized (pH(opt) 4.5; T-opt 37 degrees C and mo
lecular mass 38.5 kDa). The products of the enzymatic reaction were an
alysed by HPLC. The hydrolysis pattern showed that the xylanase was an
exo-endo acting enzyme.
