Abstract
H-1 MAS NMR spectra of alpha-chymotrypsin in aqueous solution and in i
ce are presented, The MAS technique allows one to resolve mobile prote
in polypeptide side chains, even at subzero temperature (248 K). Deter
mination of the amount of non-freezing water at the protein-ice interf
ace using MAS NMR is of advantage in comparison to transverse relaxati
on time analysis.
