N. Wegerle et Fj. Zeller, GRAIN AMARANTH (AMARANTHUS SSP) - CULTIVA TION, BREEDING AND PROPERTIES OF AN OLD INDIAN PLANT, Journal of agronomy and crop science, 174(1), 1995, pp. 63-72
Current knowledge on evolution, systematics and biology, as well as on
the status of genetic and breeding efforts on the grain-amaranth spec
ies A. caudatus, A. cruentus and A. hypochondriacus are compiled. The
mineral contents and nutrient composition are compared with those of w
heat and maize, and the potential cultivation of these crops in Centra
l Europe, on the basis of experimental trials, is discussed. Amaranth
could become a valuable human food source in Europe.
