Enzymatic hydrolysis of oleuropein carried out in a NMR tube, gave two
diastereoisomeric aglycones, which have been identified and character
ized by proton and carbon NMR experiments in the same aqueous reaction
medium. The stereostructures, assigned to the aglycones by NOESY spec
troscopy and molecular dynamics calculation are those of two diastereo
isomers, 4a and 4b.
