Bovine globin has been hydrolysed by pepsin to different degrees of hy
drolysis. Analysis of the hydrolysates, by reversed-phase high-perform
ance liquid chromatography (RP-HPLC), shows the release of LW- and W-h
emorphin-7. LW-hemorphin-7 was the first generated, at a degree of hyd
rolysis (DH), as low as 4%. In contrast, W-hemorphin-7 was produced la
ter. Our study clearly shows that W-hemorphin-7 is issued directly fro
m LW-hemorphin-7, since this later completely disappeared during hydro
lysis. This work allows us to suggest a possible pathway for in vivo h
emorphins appearance.
