The Authors examined the microbiological composition of 1,102 samples
of animal food, in order to assess the biological hazard connected wit
h their compsumption. The samples were collected from production and f
rom distribution. Particularly the Authors pay attention to those prod
ucts that appeared more suitable as carriers of potentially pathogenic
bacteria, owing to their characteristic of conservation, commercial d
istribution and consumption. Salmonella spp., Listeria monocytogenes,
Staphylococcus aureus, were isolated from several products. Bovine mea
ts is expecially tainted by Listeria, while pork by Salmonella.
