Title of the paper: Cellular growth of muscle fibre and fat cells from
Hereford steers under extensive methods of management. Muscle and fat
samples were taken from M. semitendinosus by shot biopsy at 140, 180,
300, 400, 470 and 570 days of life in twenty Hereford steers. The mic
roscopically measured diameter of muscle fibres and fat cells were inf
luenced by extensive feeding during growth. In the winter the growth o
f cells ceased and also in the summer the cells did not attain the lev
el seen in cattle kept in stables. The slaughtering in autumn yielded
only a small fat content in both carcass and muscle. The intramuscular
fat content did not meet the requirements of quality meat.
