Abstract
Odorous substances, which can be present in paper and board food packa ging and can cause tainting of the packaged food product, are identifi ed and the various sources listed. Quality assurance tests to monitor packaging for unacceptable odors and a propensity to taint foods are d iscussed, together with analytical procedures for identifying the chem ical nature of odorous and tainting substances.
